Scottish Rural Landscapes: From Ancient Fields and Forests to Modern Food Systems

I took 12 University of Wyoming Honors students to mainland Scotland to explore the landscape and food production. We met with researchers, farmers, and regulators. The course featured residency Sir Walter Scott's Abbotsford and the SRUC Highlands Research Center. We visited world famous institutions including the James Hutton Institute and Royal Botanic Gardens. Nairn; St. Andrews: and Edinburgh. The voyage culminated with a visit to the 2019 Royal Highland Show.
